In this article I will list 2 comfort recipes we will be making and also a list of some foods that should be purchased before a storm. Here are a few recipes we will be enjoying:
Low Carb Homemade Whipped Cream: 4 servings
- Ingredients:
- (35%) heavy whipping cream – 1 cup
- vanilla extract – 1 teaspoon
- himalayan salt – 1 small pinch
- 1-2 packets of stevia or 1-2 drops of liquid stevia.
- Combine everything in a bowl and use a small hand mixer to whip the cream.
Low Carb Hot Cocoa
- 1 Serving for a large mug
- Ingredients:
- 1/4 cup of heavy cream, or almond or coconut milk – cream – ¼ cup
- cocoa powder – 1 tablespoon
- stevia – 1-2 packets or 1-2 drops of liquid stevia
- cinnamon – just a pinch
- vanilla extract – 1 tablespoon
- himalayan salt – 1 small pinch
- 1 cup of boiling hot water
- Carefully mix all of the ingredients into a mug and stir until it’s all mixed together.
- You can top this with the homemade whipped cream you made.

If you have been trying to lose weight and no matter what you do you just cannot seem to lose any pounds or inches then this article is a definite must read for you.
In today’s world most of the people are just like you. Everyone is on a diet, everyone is doing low-carb or high fat and no carbohydrates or they are doing a low-calorie diet. And then we have other people that are doing nothing but smoothies and drinking juice all day long. Other people just eat fruit. And then we have people that are vegetarians but they only eat a small amount of vegetables and most of what they eat are starchy carbohydrates like pizza, pasta and rice. In fact most of us eat more bad starchy carbohydrates than any other type of food.
Most of us are eating bread, pasta, rice and potato chips and crackers all day long. Almost all of these foods are not even food. They are products made by man and there are man-made manufactured foods. They are not natural real food. They have nothing but calories and sugar and they provide no nutritional value to you.
Instead of eating all of those potato chips, pasta, bread and pizza eat some carrots, celery, lettuce, cucumber, bell peppers and broccoli.
And the problem is the so-called nutrition experts, the authorities told us along time ago that we should be eating lots of grains. But the problem is when they made this statement and said that this is the way to true health and wellness they really did not do enough research to look into the type of effect it has on our body’s chemistry. Eating nothing but bad starchy carbohydrate type of foods does nothing but increase your blood sugar level. And when your body has excess sugar floating around in your bloodstream your insulin levels go very very high and the only thing that the body can do is to store this excessive amount of sugar ias body fat. And the reason why it does this is because the sugar is very dangerous, It causes a tremendous amount of damage to the various organs and systems of your body.
And if your hormones are not in the proper balance in your body you are just going to be sick and overweight. And honestly it’s not your fault. You were just following the guidelines that have been set forth by the so-called experts in the field of health wellness and nutrition.
So again I want to tell you that if you have been doing everything that you have been told to do and you’re not losing weight it’s not your fault. You have just been given wrong information and wrong instructions and directions. Now in order to truly be healthy you have to get your hormonal levels under control. And one of the easiest things that you can do is to control this by the foods that you are eating
One of the most important hormones in your body that will have an effect on whether you are fit and trim or overweight and fat and sick is insulin. Insulin is one of the most important hormones in your body. When your insulin levels are excessively high they put you into fat storage mode. Meaning everything that you eat is going to be stored his body fat.
This means that in order to stay fit trim and healthy you have to keep your insulin levels at a relatively normal level throughout the course of your day. And the way that you do this is to control the amount of foods that you eat that turn into sugar. And as you may have guessed the type of foods that turn into sugar are your bad starchy carbohydrates that are processed and man-made such as your bread, pasta, rice, pretzels, potato chips and all those other yummy snacks that we love to snack on.
Now of course I am a firm believer in eating good healthy food and that includes lots of vegetables, every color of vegetable and every type. Vegetables are a carbohydrate but they are nutritious healthy carbohydrates that are loaded with good nutrition and healthy fiber that will help to keep us healthy. And if we are healthy most of the time our weight will be controlled.
So for me the perfect diet would consist of lots of vegetables, a modest amount of good healthy protein, a small amount of good healthy fats and a little bit of fruit and your other starchy carbohydrates.
So you see that I am not totally against your starchy carbohydrates like bread and pasta it’s just that I believe that we should be eating much less of these types of food than we are eating in today’s society.
A few paragraphs up, I told you that hormones control your health wellness and the amount of weight fat etc. that you have on your body. And this is another key point because as we get older our amounts of hormones decrease in quantity over the period of time.
And this is the reason why most of us hit a certain age usually somewhere in the mid 30s and we start gaining weight every year. First we may start out just by gaining a couple pounds a year and then that increases to as much as 5 pounds or 10 pounds a year. Then we finally wake up and realize that we are 60 or 70 pounds overweight and we need to do something about it.
You see you when we were younger and we had an abundance of hormones; they helped burn that extra sugar out of our body. They helped keep the insulin at lower levels. But as we get older and our body’s natural hormones level decrease our body is not able to burn up that extra sugar like it did when we were younger.
This is why you are now gaining weight even though you are eating the same type of food, following the same diet plan and even exercising the same way as you did when you were much younger.
Losing weight and being fit and healthy just comes down to eating the right types of food in the proper portion sizes.
And please do not forget that calories do matter.
We have lots of people coming to us from other medical weight loss centers and they were told to eat a high-protein low-carb diet and that they could eat as much meat protein and cheese as they want.
But this is not healthy and it’s not true. Your body can only handle so much protein and process it properly. Excessive amounts of protein do you turn into sugar just like your bread and pasta.
I know some of you were probably reading this article and just shaking your heads in disbelief because if you would have been given this information long ago you would not be overweight now.
So now that you have the right information let’s get you on the right path. Let’s start developing healthy lifestyle habits. Little changes over the course of time that are going to add up to lots of pounds lost and a healthier and more fit you.
Trying to do all of these changes at once can be a little bit overwhelming so I advise you to start out slowly.

- Spring mix greens – 1 handful
- spinach – 2 handfuls
- water – 2 cups of water
- frozen blueberries – 1 cup
- Apple – one Apple with the court in seeds removed – cut into quarters
- banana – 1
- Stevia – 1 packet Stevia
- ground flax seeds – 2 tablespoons
- 1 scoop Solutions 4 protein powder
- Place all of your greens into the blender and blend until it becomes liquefied and then stop the blender and add all of the of the ingredients then place the lid back on your blender and then continue blending until everything is creamy smooth.
Strawberry Banana Smoothie
- Spring mix screens – 3 handfuls
- 1 scoop Solutions 4 protein powder
- water – 2 cups of water
- apples – all too small apples with the core and seeds removed and cut into quarters
- banana – 1 small banana
- frozen strawberries – 1 cup
- Stevia – 2 packets, you can add more if needed
- flaxseeds – 2 tablespoons of ground flax seeds
- Combine all of your vegetables into the blender and blend until it becomes liquid than stop the blender add the rest of the ingredients, placed the lid back on top of your blender and blend until it’s creamy smooth.
Berries and Apple Smoothie
- Spinach – 3 handfuls of spinach
- water – 2 cups
- Apple – 1 small apple cord seated and sliced into quarters
- blackberries – 1/2 cup of BlackBerries
- blueberries – 1/2 cup of blueberries
- ground flaxseed – 2 tablespoons
- 1 scoop Solutions 4 protein powder
- Stevia – 1 – 2 packets or more if needed
- First blend all of your greens and then add the rest of the ingredients and blend until you have a deliciously creamy smoothie.
Doc’s Favorite Smoothie
- Spinach – 2 handfuls
- Kale – 2 handfuls
- frozen peaches – 1 cup
- banana – 1 small banana
- water – 1-2 cups
- 1 scoop Solutions 4 protein powder
- ground flax seeds – 2 tablespoons
- Stevia – 2 packets or more depending upon your taste preferences

Honey Banana Smoothie Recipe
- Ingredients:
- water – 3/4 cup
- unsweetened coconut milk – 1/4 cup
- frozen bananas -2
- honey – 1 tsp
- ground ginger – 1/4 tsp
- ground cinnamon – 1/4 tsp
- vanilla – 1/4 tsp
Now just combine all of these yummy ingredients into a blender, blend away and enjoy.
Low-Carb Butterscotch Delight Crispy Bars
Ingredients
- Crispy Crunchy for the inside:
- Swerve – 1 cup
- butterscotch extract – 2 teaspoon
- coconut oil – 3 tablespoons
Nugget:
- butter or coconut oil – 1/4 cup
- Swerve or erythritol – 1/4 cup
- stevia glycerite – 1 teaspoon
- cream cheese – 1/4 cup
- natural peanut butter – 1/4 cup
- vanilla – 1 teaspoon
Chocolate Icing:
- butter or coconut oil – 6 tablespoons
- unsweetened cocoa powder – 4 tablespoons
- Swerve confectioner – 4 tablespoons
- stevia glycerite – 1 teaspoon
- vanilla extract – 1 teaspoon
- ground sea salt – 1/8 teaspoon
Instructions
To make the crispy part:
Start by pre-heating our oven to 350°F and then line a baking sheet with a good-quality parchment paper. After that mix together the coconut oil, the butterscotch extract and the swerve until it looks like small breadcrumbs.
Now all that you have to do is spoon it out on top of your parchment paper and spread it nicely into a thin layer. Place it in the oven and allow it to bake for approximately 15 minutes, plus or minus a few minutes. When it’s done just take it out of the oven and set it on the side and let it cool down totally. The more you let it cool the harder the candy will become and just break it into tiny pieces.
To make the nugget:
As the yummy crunchy part is in the oven baking we can now make the nugget. Put your 1/4 cup of swerve, 1/4 cup of natural peanut butter, 1 teaspoon of vanilla extract, 1 teaspoon of Stevia glycerite, 1/4 cup of butter and the cream cheese in a medium-sized bowl ( just make sure that it’s microwavable safe), stir it up a little bit then place it in your microwave for approximately one minute or so. Let it cool down and then mix everything together nicely.
Now, just mix the nugget to the crunchy part that you have broken into pieces and mix them until they are combined nicely. Take a 4 x 4 inch glass container and lined with parchment paper and pour this mixture into it. Make sure that you level out the top.
To make the Chocolate icing:
Place a saucepan over low heat and add in your coconut oil and when it starts to melt store in your extracts, chocolate, salt and sweeteners until everything is totally melted. When this is melted spread it over top of your nugget mixture and then sent it back in your refrigerator to cool down. When it is ready just cut it into any size of bars that you like. I hope you enjoy these nice tasty snacks as much as I do. This recipe makes eight servings and each of them has approximately 3 grams of carbohydrates, 250 cal about 4 grams of protein.
Cocoa Nutty Low-Carb Treats
- Ingredients
- Swerve – 1 cup
- unsweetened cocoa powder – 3 tbsp
- vanilla extract – 1 teaspoon
- almond extract – 1/4 tsp
- coconut oil – 3 tbsp
Instructions
Start by preheating your oven to 350°F and take a baking sheet and spread parchment paper over top. Take a nice sized bowl and mix together your extracts, sweeteners, coconut oil and of course your cocoa powder. Mix it together until it forms into the shape resembling small breadcrumbs. Now, just spread it out over top of your baking sheets and bake it for approximately the 13 – 16 minutes. The cooking time will vary depending upon the intensity of your oven. When it finished baking, allow it to cool down. It will get harder the longer that cools. Be sure that you keep this in an container that is airtight in the refrigerator. I have kept it in the refrigerator up to 2 this table 3 weeks and it was fine. You can use this as a topping for some of the other great recipes I have on the site or you can just eat it by itself. This recipe makes 4 servings and each has approximately 97 cal, 1/2 grams of protein and 1 grams of carbohydrates.
Red Fish
- Ingredients
- natural sweetener -1/2 to 1 tbsp
- water – 3 tbsps
- gelatin – collagen gelatin – 1½ tbsp
- Instructions
Take a microwavable safe cup and mixing your sweetener, gelatin and water and stir it all and so everything’s is totally dissolved. Now all you have to do is put in your microwave for about 35 to 50 seconds, just until it starts to boil. Allow it to cool down a little bit and then pour it into a tray. My younger nieces love gummy worms so my wife found a cute gummy worms tray that we pour this mixture into and make it for them. Now we are ready to set them in the refrigerator and keep them there until they are from. This recipe makes one serving and the total serving has about 20 cal, 6 grams of protein and 0 carbohydrates.

If you are one of our weight loss patients you know that I believe that food is meant to be enjoyed. Growing up in my family everything that we did, every celebration every event was always celebrated with food, and lots of. In a sense, food was a celebration of life.
And some of my happiest from childhood are of sitting together with my great-grandparents, grandparents, parents, my brother and sister, and uncles and cousins at my great-grandmothers dining room table where we feasted upon ravioli, lasagna, baked zitti, gnocchi and desserts like ricotta filled cannolis and cream puffs. Yes, you may have guessed, that I grew up in a large Italian family! And like most Italian families most interactions with one another took place at the kitchen table or dining room table enjoying good food and each other.
That is why in our weight loss program we make a point of giving you lots of recipes of wholesome food that we all grew up eating but our versions of these recipes will have lower calories and lower carbohydrates. Making them weight loss friendly. But they taste so good you won’t believe there diet food.
So here are two great recipes; one is for a low carbohydrate version of my grandmother’s rotolo and the other is for a low-carb recipe for lasagna that is quick and easy to make.
This is a family recipe that my great-grandmother Virginia has handed down to my wife. My wife has changed the recipe a bit, to make it more diabetic friendly, but it tastes just as good if not better than Great[grandma’s recipe.
Rotolo – Verdi Style
- Ingredients for the Filling:
- ricotta cheese – 12 ounces 1 1/2 cups
- Parmesan cheese, approximately the 4 ounces of grated Parmesan cheese
- finely chopped fresh oregano – 1/2 cup
- finely chopped – fresh parsley – 1/2 cup
- egg – 1 large egg
- minced raw garlic – 3 cloves
- Sea salt – 1/2 teaspoon
- nutmeg – 1/8 teaspoon of ground nutmeg
- black pepper – 1/8 teaspoon of ground black pepper
- Additional Ingredients:
- Roasted or delimeat chicken breast that you can get from your supermarket – cut into strips that are 1.5 inches wide and 6 inches long. You should have about 24 slices of meat.
- 2 cups of tomato sauce
- shredded mozzarella cheese – approximately the 1/2 cup
- some additional Parmesan cheese to serve over top when everything is finished cooking.
First preheat your oven to 300°F. Combine all of the ingredients together except for the chicken breast tomato sauce and the extra 1/2 cup of shredded mozzarella and Parmesan cheese. Make sure that all of the ingredients are mixed nicely.
Then take your strips of chicken and place them on your counter and take 1/3 cup of the mixture of all your ingredients in place it on to your strip of chicken. Then start rolling it up and place it with the seam side down. Do this with the rest of your chicken strips. After that take 1 cup of your tomato sauce and pour it into the bottom of a cast iron skillet approximately 12 inches or you can use any other type of ovenproof skillet or pan.
Then take your chicken rolls and put them in the pan with them laying on their side. Take all of your roles of meat and place them in the pan so they fit very snugly. Make sure that your filling is facing upward. Next take the remaining 1 cup of tomato sauce and pour it over top. You can now put this in your oven and let it bake for approximately the 20 minutes or until the cheese is melted completely.
When it is done take it out of the oven and you can now sprinkle your mozzarella generously over top. Place it back in the oven for about another 10 minutes or so or until the cheese is melted once again. After that take it out of the oven and let it stand for at least a good 15 minutes before serving. And of course you can top it with the extra Parmesan cheese if you would like.
This recipe makes 12 servings each of them has about 386 calories, 61 grams of protein and 5 grams of carbohydrates.
Lasagna – Low Carb Style Roll Ups
- Ingredients:
- approximately three-quarter pound and you can use either oven roasted chicken breast from the deli counter – approximately 16 slices or you can use sliced oven roasted turkey from your deli counter. Make sure that the slices of meat are approximately 1/8 inch and you want to have 16 slices.
- To make the filling you will need:
- ricotta cheese – 1 cup
- egg – 1 large egg
- Parmesan cheese – approximately 1/3 cup of grated Parmesan cheese
- mozzarella cheese – 1 1/2 cups of shredded mozzarella cheese
- Additional Ingredients
- tomatoes – three medium-sized tomatoes – sliced thin
- fresh basil leaves
- 2 cups of tomato sauce – meat sauce or marinara sauce
As always first we have to preheat your oven. Preheat the oven to 325°F. Place your turkey on a large sheet of parchment paper. To make the filling take a large bowl and mix together the eggs ricotta cheese until their mixed nicely and then stir in the mozzarella cheese and the Parmesan cheese.
After you have made the filling take about 1/4 cup of it and place it on top of one of your meat slices and spread it out evenly. Do this with the remaining slices of meat. Take about 3 slices of tomato and place them over top of your filling on each of the slices of meat. Next take some of your basil and place it on top of your tomatoes.
After that rollup each slice of meat and place them, seam side down, a and a baking dish that is approximately 8 inches. When you have all of the strips of meat rolled up with the mixture tomato and basil inside and placed in your baking pans top each one of them with the marinara sauce. I like to use about 2 – 3 tablespoons of the sauce.
Now we are finally ready to place it in the oven and bake it for about 25 minutes or so or until the cheese is melted. This recipe makes four servings each of them has 467 cal, 50 grams of protein and 9 g of carbohydrates.

Breakfast – Scrambled Eggs
- Ingredients:
- eggs – 3
- butter – 2 ounces
- salt and pepper to taste
Start by taking three large eggs cracking them open and beating them with some salt-and-pepper. Next, take a pan add the butter to it and set it overtop a medium heat. When the butter has melted add eggs to the pan and stir this for at least 2 minutes. I like my eggs thoroughly cooked. You can even add some type of protein like chicken, beef or fish. Often times I add bacon , avocados and some cheese. If you are super hungry you can add more butter to the recipe.
Lunch – Mega Salad
- Ingredients:
- beef, chicken, fish or any other protein of your choice – 4 ounces
- leafy greens – 1 ounce
- cherry tomatoes – 1 ounce
- bell pepper – 1 ounce
- cucumber – 1 ounce
- scallion – 1/2
- olive oil or mayonnaise – 1/4 cup
Chop your vegetable then add your greens to the bowl and then add the other vegetables. I like to add broccoli, red and green cabbage for a nice crunch to my salads.
Shred or chop vegetables of your choice. First, put dark leafy greens such as spinach or arugula at the bottom of the jar. Iceberg lettuce or romaine works too. Green and red cabbage gives a fresh crunch. Chopped broccoli or cauliflower also works great. You can also add avocado, bell peppers – red- green and yellow, carrots and any other vegetables that you like. Then top this with your protein – beef, chicken or fish. I also like to add cheese, olives, and a small amount of nuts and seeds. For the dressing I like olive oil, vinegar and herbs and spices, but sometimes I may have some mayo or lemon as a dressing.
Cheese-Filled Chicken
- chicken breasts – 4
- olive oil – 2 tbs
- bell pepper – 1
- garlic clove -1
- pickled jalapeños, finely chopped – 2 tbs
- ground cumin – 1/2 tsp
- cream cheese – 3 ounces
- shredded cheese – 5 ounces
- salt and pepper – to taste
- tooth picks – 4
Guacamole
- avocados – 2
- garlic cloves – 1-2
- the juice of ½ lime
- olive oil – 3 tbs
- white onion – 1/2
- fresh cilantro 1/3 cup
- tomato – 1 diced
- salt and pepper to taste
- For serving
- sour cream 2/3 cup
- leafy greens or lettuce – 1/2 pound
Instructions
First preheat your oven to 350°F (175°C).
Take your garlic and bell peppers and chop them up nicely. Then place them in a pan with olive oil and saute. When they are soft set them on the side in a bowl. Then stir in the cheeses, spices and japenos. Slice your chicken down the middle and spread it apart like you open the newspaper. Take a large spoonful of the mixture and place it into the middle of the chicken. Add the salt and peer to taste and any other spices you like. Fold the chicken breast and secure it with the toothpick.
Do this with all of the chicken breasts then fry them a bit. Then put them in a baking pan and bake them until they are totally cooked. You can add the remaining batter overtop of the chicken breasts before baking them. When they are cooked you can add some good health fats like guacamole or sour cream. And please add lots of vegetables. To make the guacamole all you have to do is mash the meat of the avocado, (just like mashed potatoes – but without all of the carbs), and mix in some diced tomatoes, lime juice and olive oil. You can also add other herbs and spices to give it more flavor. Make sure you remove the toothpicks before serving this delicious dish.
