Chicken with Artichokes Low Carb Recipe by Medical Weight Loss Philadelphia
Hello everyone. This is another awesome delicious recipe that is low carb low sugar and not only tastes good but is conducive to your losing weight and achieving your weight loss goals.
In our medical weight loss program we believe that our weight loss patients should be able to eat delicious food and still be able to lose weight. So with that being said here is another one of our delicious recipes I hope you enjoy it.
- Chicken with Artichokes
- 4 boneless skinless chicken breast
- 3 tablespoons of butter
- 1 can quartered artichoke hearts drained
- one half red bell pepper cut into strips
- 1 medium onion sliced
- 1 clove of garlic crushed
- quarter cup of dry white wine
- 1 teaspoon of dried thyme
Melt 2 tablespoons of butter in a heavy skillet over medium heat and sauté the chicken breast until their golden dish should be approximately 5 to 7 minutes per side. Then remove them from the skillet. Melt the remaining tablespoon of butter and toss the artichoke hearts, pepper, onion and garlic into the skillet. Sauté this about 3 minutes or so stirring frequently. Pour the wine into the skillet and sprinkle the thyme over the vegetables. Place the chicken breast over the vegetables, turn the heat to medium low cover and simmer for about 10 minutes.
This makes approximately 4 servings each with 8 g of carbohydrates and 4 g of fiber for a total of 4 g of usable carbs and 26 g of protein.

Low Carb Weight Loss Chicken Recipes
Hello everyone this is Dr. Kenny. In our weight loss program we like our weight loss patients to eat delicious food that will make you lose weight. So in this article I am going to give you several of my favorite chicken recipes. Throughout our website I have many recipes for weight-loss shakes, smoothies, desserts, appetizers and entrées and when it comes to entrées it seems that chicken is the favorite of most of my patients.
Here are a few of my favorite chicken recipes:
Balsamic Vinegar Roasted Chicken:
- 1 cut up boiler – fryer
- bay leaves
- salt to taste
- pepper to taste
- 3 – 4 tablespoons of olive oil
- 3 – 4 tablespoons of butter
- 1/2 cup of dry white wine
- 3 tablespoons of Bell sonic vinegar
- Preheat the oven to 350°F. Tuck a bay leaf or 2 under the skin of each piece of chicken. Sprinkle each piece with salt and pepper and arrange them in a roasting pan. Drizzle the chicken with olive oil and dot them with the same amount of butter. Roast in the oven for ones and a half hours, turning each piece every 20 – 30 minutes. When the chicken is done, put it on a platter and pour off the fat from the pan. Put the pan over medium heat and pour in the white wine and Bell sonic vinegar. Stir this around, dissolving the tasty brown stuff stuck to the pan to make a sauce. Boiled this for just a minute or two, pour into a sauce boat or a pitcher, and serve with the chicken Discard the Bay before serving. This makes 4 servings. Each with 2 g of carbohydrates, a tracer fiber and 44 g of protein.
Roasted Chicken Greek Style:
- 3 to 4 pounds of chicken – whole, split in half, cut up or any type of chicken that you like.
- 1/4 cup of lemon juice
- 1/2 cup of olive oil
- 1/2 teaspoon of salt
- 1/4 teaspoon of pepper
- Wash the chicken and patted dry with paper towels. Combine the lemon juice, olive oil, salt and pepper and stir them together well. If you’re using a whole chicken, rub it all over with some of this mixture, making sure to rub planning inside the body cavity as well. If you’re using cut up chicken, put it in a large resealable plastic bag, pour the marinade over it and seal the bag. Let the chicken marinate for at least an hour or as long as a day. At least one hour before you want to serve the chicken, pull it out of the bag. You can either grill your chicken or you can roasted in a 375°F oven for about one hour, which ever way you choose to cook your chicken, cook it until the juices run clear when it’s pierced to the bone. This makes about 5 servings. Each with less than 1 g of carbohydrates, a bear trace of fiber and 52 g of protein.
Tarragon Chicken:
- one cut up chicken
- 2 tablespoons of butter1 teaspoon of salt
- pepper to taste
- 3 tablespoons of dried tarragon leaves
- 1 clove of garlic crushed
- a half cup of dry white wine
- If your chicken is in quarters, cut the legs from the size and the wings from the breast. Melt the butter in a heavy skillet over medium – high heat and brown the chicken, turning once or twice until it’s golden all over. Pour off most of the fat and sprinkle the chicken with the salt and just a dash of pepper. Scatter the tarragon over the chicken, crushing a little between your fingers to release the flavor, and then add the garlic and the wine. Cover the skillet, turn the heat to low and simmer for about 30 minutes, turning the chicken at least once. Spoon a little of the pan liquid over each piece of chicken one serving. This makes approximately 4 servings each with 2 g of carbohydrates, a trace of fiber and 44 g of protein.
Curried Chicken:
- 4 – 5 chicken quarters cut up and skinned
- 1 medium onion
- 1 tablespoon of butter
- 1 rounded tablespoon of curry powder
- 1 cup of heavy cream
- 3 – 4 cloves of garlic crushed
- a half cup of water
- Pre-to oven to 370°F. Arrange the chicken in a shallow baking pan, chop the onion and scatter it all over the chicken. Melt the butter in a small heavy skillet and sauté the curry powder in it for a couple of minutes, just until it starts to smell good. Mix together the cream, garlic, water and sautéed curry powder and pour the server the chicken. Bake it uncovered for one hour – 1 hour 20 minutes turning the chicken over every 20 – 30 minutes so that the sauce flavors both sides. To serve, arrange the chicken on a platter. Take the sauce in the pan and scrape it all into your blender. Blend it with a little more water or cream, if necessary, to get a nice rich golden sauce. Pour it over the chicken and serve. This makes about 4 big servings. Each with 6 g of carbohydrates and 1 g of fiber for a total of 5 g of usable carbs and 42 g of protein.
Lorenzo’s Chicken:
- 3 chicken quarters
- 1 – 2 tablespoons of olive oil
- 8 ounces of plain tomato sauce
- 4 ounces of mushrooms
- 1/2 cup of dry red wine
- 1 green pepper
- 1 small onion chopped
- 1 – 2 cloves of garlic crushed or 1 – 2 teaspoons of chopped garlic and oil.
- 1 – 1 1/2 teaspoons of dried oregano
- 3 ounces of shredded mozzarella cheese
- You can also sprinkle some Parmesan cheese over everything if you would like.
- Strip the skin off the chicken and cut the leg inside quarters into at the leg joint. Warm the olive oil in a big heavy skillet and brown the chicken and it over medium heat. Pour in the tomato sauce, mushrooms and wine. Add the green pepper, onion, garlic and oregano. Cover the whole thing, turn the heat to its lowest setting and forget about it for about 45 minutes – 60 minutes. When the chicken is cooked through, remove the pieces from the skillet and put them on the serving plates. If the sauce is in good and sick by now turn up the heat to medium – hi and let the sauce boil down for a few minutes. While the sauce is thickening sprinkle the shredded mozzarella over the chicken and warm each plate in the microwave for 20 to 30 seconds on 50% power to melt the cheese. Spoon the sauce over each piece of chicken and serve. You can sprinkle a little bit of Parmesan cheese over your chicken if you would like. This makes about 3 servings each with 16 g of carbohydrates and 4 g of fiber for a total of 12 g of usable carbs and 49 g of protein.

Confessions of a Medical Weight Loss Diet Doctor
Good morning everyone, this is Dr. Kenny. Usually most of my post on our website are happy, upbeat and are usually about healthy and delicious recipes, how to lose 2-5 lbs a week, weight loss exercise routines and information on some of the newest research on the weight loss, health and wellness.
But today this post is going to be more personal. If you are one of our patients you know that Dr. Duffield, myself and our staff are very friendly and personable. And in fact many of you know just as much about us as we know about you. And this is the way we like it.
Everyone knows that Dr. Duffield’s son is doing research at Drexel medical school, his daughter is in college and wants to be a teacher and that his younger son is a hockey superstar.
And that my older son and daughter are both in law school and my youngest son is a senior in high school and is trying to decide between attending Penn State University, Maryland University or Boston University.
In our weight loss practice we think of everyone as part of our family and this creates a warm and nurturing environment. This type of environment is not only beneficial to you our patients but it’s also beneficial to us. Each and every day we have the opportunity to assist people to not only lose weight but to help them improve their overall health.
It is extremely gratifying to help a person lose 30 pounds and have them tell us that they have never felt better in their life, that they are taking less medications and conditions like diabetes, high blood pressure and hyperthyroid are improving.
Now with all of this being said I am going to tell you that at the young age of almost 51 years young I have been diagnosed with type II diabetes. It seems that genetically the cards were stacked against me. My Mother has diabetes.
As good as my diet has been it has not been perfect. And because of slacking in my diet and my genetic predisposition, I am now diabetic.
But there is a silver lining in this cloud. With following the proper diet and taking one tablet of metformin a day my blood sugar level has decreased over 150 points in just 1 week. And I have lost 7 pounds. Surprisingly even my complexion has improved and people are telling me that I look younger.
So being diagnosed with type II diabetes was probably a blessing in disguise. It was a wake-up call that I had to start making the time to take care of myself.
To exercise a little bit almost every day even if it is just a quick walk and to start following the proper nutrition and diet program.
You see for the most part I was following a pretty good diet although I confess that I probably did over indulge in my breads, pastas, rice, beans and of course pizza.
I knew that I was a good 15 pounds overweight but I figured that I am almost 51 years young so I convinced myself to be comfortable with the way I looked and the way I was feeling.
Even though I was not feeling my best. I just convinced myself that this is the way 51-year-olds should feel, and that I was getting older. Sadly I just accepted all of this and really did not put forth any extra effort to eat 100% right and get more exercise.
So being diagnosed with diabetes was indeed a blessing. It was a punch right on the chin that knocked me out. But to quote a phrase from the last Rocky Balboa movie “It’s how many times you get up after you have been knocked down that makes you a champion, that makes you a winner.”
I have decided to get up from the diabetic knockout punch. I have decided to follow the proper diet to reduce the sugar levels in my blood, the proper diet that will decrease insulin spikes in my blood and the proper diet that will help me lose weight and be not only more thin but more importantly, healthier.
It’s surprising that this diagnosis came a week before I was a guest on a local radio show, “Did You Know” with Bryant Greene on 900 AM, and one of Mr. Greene’s questions was, “Does diabetes decrease your life span?”
Shockingly diabetes does decrease your lifespan by as much as 8.5 years. This is because diabetes can cause other health issues like high blood pressure, stroke, neuropathies, heart attacks and even blindness.
So many people called into the radio show with questions on diabetes. Questions like, “What is the best type of diet for a diabetic and what is the best type of exercise program if you are diabetic? “
It totally amazes me that there is so much bad information out there on diabetes. Even information that is on some of the websites of supposed authority organizations is wrong.
This is why diabetes is killing people. This is why people are having to take increasing dosages of medications and insulin injections for their entire life.
Now, please do not misunderstand me, medication is needed especially when you are first diagnosed with diabetes. Medication is not a bad thing.
But you are doing a disservice to yourself if you are not going to make an effort to follow the proper nutritional plan to help decrease your sugar levels and get your diabetes under control.
When I was first diagnosed, my doctor told me that I would probably need to be on 2 or 3 medications and eventually insulin injections. But now he is not so sure about that. He’s totally amazed how quickly my sugar levels have decreased with taking just one medication and following my anti-diabetic nutrition plan.
My anti-diabetic nutrition plan is strict, but it is effective, for not only myself, but also for other patients that have consulted with us.
I know that this has been a very long article and I do apologize for its length. I have written this in the hopes of helping others who suffer from diabetes and just don’t know what to do about it.
It’s very surprising that following the proper nutrition plan can help with health conditions and diseases like diabetes, hypothyroidism, high blood pressure etc.

Why Aren’t I Losing Weight & What To Do About It

In our weight loss center we see patients that need to lose anywhere from 20 pounds to over 100 pounds. For the majority of our patients losing weight is fast and easy if they follow our program. We also have just as many patients that have had a difficult time losing weight in the past. And it’s not from a lack of effort that they are not losing weight. But it is because a large part of our society are having difficult time losing weight because of other health conditions like diabetes and hypothyroidism and also from medications that they may be taking.
Some of the health problems that make it almost impossible for people to lose weight are: diabetes, hypothyroidism, having and suffering from chronic stress, polycystic ovary syndrome, Cushing’s syndrome, syndrome X, depression and especially the hormone changes that woman have to deal with during pregnancy and when they are peri-menopausal and in the menopause.
There are also a multitude of medications that make it very difficult for people to lose weight. Medications that can make it very difficult to lose weight are some of the most common medications that people take for treating type 2 diabetes, high blood pressure, some heart conditions, hormone replacement therapy, birth control pills, corticosteroids taken for conditions like asthma and lupus, antiepileptic medications taken to control seizures and even medications that are used to treat depression. (But you must not ever stop any medications unless your medical doctor tells you to.)
It is well known that some of the drugs used for taking depression may increase your appetite even lower your fat burning metabolism. Beta blockers can also decrease your metabolism and some hormone replacement therapies increases the body’s level of estrogen which is a fat storing hormone.
So because of this you could be following the latest fad diet and exercising eight hours a day but will never be able to lose the weight. But to not give up hope. We have diet weight loss nutritional plan designed specifically to help these difficult weight loss conditions.

Combine all of these ingredients into a blender and blend until nice and smooth.
Lime Melon Cooler Low Carb Recipe
- 1 cup of plain nonfat yogurt
- 1/2 cup of sugar free almond milk or coconut milk
- 1/2 cup of honeydew melon chunks frozen
- 1/2 teaspoon of lemon – lime sugar-free drink powder mix
- Optional : a Pinch to 1/2 teaspoon of Guar gum or xanthan gum
Combine all of these ingredients into a blender and blend until nice and smooth.
Sun Kissed Peach Smoothie Recipe
- 1 cup of plain nonfat yogurt
- 1/2 cup of sugar free almond milk or coconut milk
- 1/2 cup of sliced frozen peaches
- 1/2 teaspoon of orange sugar-free drink powder mix
- Optional : a Pinch to 1/2 teaspoon of Guar gum or xanthan gum

Vanilla with Cherries on Top Weight Loss Smoothie
- 1/2 cup of no sugar added vanilla ice cream
- 1 1/2 cups of sugar free almond milk or coconut milk
- 1/4 cup of candy sour cherries in water, drained
- 2 tablespoons of vanilla whey protein powder
- 1 tablespoon of sugar free Cherry syrup
- 1/2 teaspoon of vanilla extract
- Optional : a Pinch to 1/2 teaspoon of Guar gum or xanthan gum

Yogurt Raspberry and Strawberry Smoothie
- 1/4 cup of plain nonfat yogurt

Strawberry Kiwi Delight Weight Loss Smoothie

- 1/2 cup of kiwi strawberry diet soda
- one half kiwifruit peeled

Best ever weight loss smoothie recipe for burning fat, eliminating hunger and speeding up your metabolism and muscle recovery. Good morning everyone this is Dr. Kenny and in this article for today I and going to give you the recipe for my most favorite weight loss smoothie ever. In our medical weight loss program each and every day at least one patient will ask what are my favorite recipes that will give them fast weight loss but they taste good and do not taste like cardboard.
All of us know that in almost every other weight loss program diet food has no taste and if it does have any taste at all it usually taste like cardboard. But if you have looked through our website at all you already know that we have tons of delicious weight loss recipes throughout our site as part of our medical weight loss program. But today Lisa who was one of our superstar weight loss patients really pushed me to give her my most favorite recipe for a weight loss smoothie.
So here is the recipe I call it our Best Ever Weight Loss Smoothie and I hope you enjoy it as much as I do.
Ingredients:
- 1 banana, peeled
- 1 grapefruit, peeled and remove seeds
- 2 cups spinach
- 1 plum, pitted
- 1/4 cup water
We are going to combine all of these ingredients into a blender and enjoy.
Grapefruit has been in diet food forever. When I was a young boy I remember my Mother eating grapefruit each and every day as part of her weight watchers weight loss program. Grapefruit has a combination of vitamin C and lots of fiber that not only help you burn fat but they keep you full throughout the day. And the banana, plum and spinach have plenty of potassium and other minerals that will actually help your muscles recuperate after a strenuous exercise routine. And let’s not forget that this smoothie is absolutely delicious and that the fruity taste makes this a perfect recipe for breakfast and even for a snack any time during the day.
The only thing I would avoid is having this later on in the evening because it contains so much fruit it does contain a good bit of sugar and I would like you to try to have this smoothie no later than 4 PM or 5 PM. That way your body will have enough time to burn off the sugar before you go to sleep at night.
This weight loss smoothie is especially good after an intense cardiovascular exercise routine. The potassium of vitamins and minerals will help your muscles recover much more quickly and the fruit will actually give you a burst of energy so that you will not feel as fatigued as you normally would after this type of exercise routine.

Baked Chicken Nuggets by Medical Weight Loss
Chicken nuggets are a great food for snacking throughout the day and if your children are like mine chicken nuggets was, is and will always be there favorite food. I like that I can put a bunch of them in a zip-loc bag and carry them with me all day as a good healthy protein snack.
And there are many days when I just do not have the time for a proper lunch and these tasty chicken nuggets become not only my snacks for the day but also my lunch. In our medical weight loss program we believe in eating good food all day. So this recipe makes staying on your diet very easy.
My friends don’t understand how I can snack on chicken nuggets all day and still maintain my weight loss. But if you are one of our patients you understand this because you are doing the same thing. These weight loss tips and recipes are all part of our medical weight loss program.
Here is the recipe:
Ingredients:
- 3 boneless, skinless chicken breasts weighing about 6 oz. / 170 g each
- 1/4 cup of oat bran
- 1/4 cup of IsaCrunch
- 1/4 cup coarsely ground almonds
- 1/2 teaspoon sea salt
- 1/2 teaspoon white pepper
- Pinch garlic powder
- 1/2 cup water or low-sodium chicken broth
- 1 large egg white, lightly beaten
Directions:
Preheat oven to 400°F. Prepare baking sheet by lining with parchment paper or coating lightly with best-quality olive oil. Cut chicken breasts into nugget-sized pieces, about 1.5 inches square. Set aside. Next, combine all dry ingredients in a large container with a tightly fitting lid. Shake well. This is your coating mixture. Combine water and egg in a medium bowl. Dip each piece in the water/egg-white mixture. Then dip each piece in the coating mixture. Make sure each piece is well coated. Place on the baking sheet. When all of your chicken has been coated and your baking sheet is full, place in the oven and bake for 10-15 minutes or until golden. This should make 24 chicken nuggets and 4 nuggets have 100 Calories, 3 grams of Fat, 7 grams of Carbs and 12 grams of Protein.

Eggplant Parmigiana Low Carb Recipe by Medical Weight Loss Philadelphia
Yes! Our Patients in our Philadelphia Medical weight loss program can eat Eggplant Parmigiana and still lose weight. This why our patients tell us we are the best medical weight loss program in Philadelphia and Bucks County, PA. Because you can eat delicious food that is normally not considered diet food and still lose weight. My wife took my Great-Grandmother Virginia’s eggplant parm recipe and made it low carb. And I have to say it tastes better than my Great-Grandmother’s.
So If you miss eggplant parmigiana – well, now you can eat it again. This is not a quick-to-fix meal, but if you can find the time to do it, you will be rewarded. You can serve it with my wife’s Superb Rolls or Intense Garlic Bread Surprise..
Eggplant Parmigiana has only Carbs per serving 9.5 grams of carb. Should serve 6.
Ingredients:
- 2 medium-size eggplants, peeled (about 18 ounces)
- 4 ounces shredded whole-milk mozzarella cheese
- 5 ounces grated Parmesan cheese
- 4 ounces shredded Swiss cheese (or very thinly sliced)
- 6 Tablespoons tomato paste
- 1 ½ cups dry white wine
- ½ cup water
- salt to taste
- freshly ground black pepper to taste
- 2 eggs, beaten
- ¾ cup bread crumbs
- ½ Teaspoon garlic powder
- ¼ cup olive oil or coconut oil (more if needed)
- 4 Tablespoons butter (1/2 stick), (optional)
Butter or oil a 2-quart baking pan or ovenproof casserole dish. Cut the eggplant into ½-inch-thick slices. (Read about eggplant on page 220.) Set out the cheeses and have ready. Mix the tomato paste with the wine and water; stir into a smooth sauce (you can do this in the blender). Season with salt and pepper.
Set out two shallow bowls for the beaten eggs and the bread crumbs. Mix the crumbs with garlic powder and salt. Dip each slice of eggplant first in the eggs, then in the bread crumbs. Coat well. Put the coated slices on a platter.
Heat a large, heavy skillet over medium-low heat. Heat the olive oil. Cook the eggplant slices in the hot oil until golden brown on each side. Do not crowd the slices; you need to be able to turn them. Preheat oven to 350ºF when you are about halfway through cooking the eggplant. Drain eggplant on paper towels. Transfer the cooked slices to a holding plate until all slices are cooked. Note that these bread crumbs tend to darken faster than standard bread crumbs. Reduce heat if needed to keep the slices light golden in color.
Build the eggplant parmigiana. Put a layer of eggplant (about half) in the bottom of the casserole dish. Sprinkle about half of each of the three cheeses over the eggplant slices, but reserve some Parmesan cheese (to taste) for topping the finished casserole. Pour about half of the sauce over the cheeses. Add the next layer of eggplant slices and repeat the process. Pour the rest of the sauce on top. Sprinkle the casserole with bread crumbs and 1 ounce Parmesan cheese. Dot with butter. Bake the casserole, uncovered, for about 30 to 35 minutes or until light golden brown.
This this is so delicious and it brings back memories of when I was a young boy enjoying a Sunday dinner with my entire family from my Mom and Dad, Brother and Sister, all of my cousins, Aunts Uncles and Grand parent and Great-Grand parents too.

Here is one of my favorite shake or smoothie recipes. It has everything in it from coconut milk or almond milk, yogurt, whey protein, vegetables, cinnamon and other spices. It has ingredients that are good for your brain and mental acuity. Making you more sharp and alert and it also has ingredients is that will supply your body with the nutrients that it needs so that you will have the energy to perform all of your everyday tasks and it will also satisfy your hunger. I would suggest that you add the optional ingredients to your shake because they will help speed up your fat burning metabolism and satisfy your cravings and decrease your appetite for most of the day.
Einstein Fat Burning Shake
- 1 Cup coconut milk (can or carton)
- 1 Teaspoon of coconut oil – only if you use cartoon coconut milk
- 1/2 Cup blueberries
- 6 ounces Total FAGE yogurt
- 1 Scoop Whey protein powder
- 1 Teaspoon Cinnamon
- Optional
- 1 Teaspoon Organic grass fed butter
- 1 Teaspoon Turmric
- 1 Teaspoon Flax seed
- 1 Handful of kale
Combine all of the ingredients into the blender and blend until smooth.

Low Carb Italian Pizza Crust Recipe by Medical Weight Loss Philadelphia
Italian Pizza Crust
Note: Total: 5 carbs.
This crust had a good texture without much “soy” taste. I would like to try it for sandwiches next.
Ingredients:
3/4 cup soy protein powder or isolate
1/2 cup cream
3 large eggs
seasonings (garlic powder, basil)
Preheat oven to 350 and spray cookie sheet with non-stick spray. Mix protein powder, cream and eggs in bowl with whisk until smooth. Spread on cookie sheet. Bake 20 min. (can add sauce, cheese and toppings and put under broiler for few minutes)
